Make one rosé a year?
You could do that. We didn’t.
A lot of people were asking us to bring back the pale rosé. So, we did and things got a little Disobedient. At the same time, plenty of people were telling us how much they loved the Cantillon. So, we thought, f*ck it, let’s make a darker style as well.
And here it is.
We left the grapes on their skins for longer, concentrated the skin-to-juice ratio and pushed the press a little harder. The result is a rosé with deeper colour, more texture and a softer, less acid-driven profile. A dark rosé. Not existential crisis dark – but we’re getting there. Stylistically, it sits somewhere between Cantillon and Disobedient, not quite either, but borrowing the best bits from both.
For the labels, we teamed up with Japanese sommelier and rising artist Momoka Mitake. Which was pretty dope.
Normally this is the point where you’d wheel out some pretentious wine writer to tell you about wild strawberries picked at dawn, rose petals and the lingering memory of a distant summer.
We’re not going to do that.
Let’s just say it’s a great rosé. Like really great. And you’re going to love it. And if you don’t, well, you can always buy the pale instead.
