100% Chardonnay

Well, now for something completely different. We, of course, love Burgundy; I mean, who doesn’t? We know some people say they don’t like oak, but, yeah, whatever, this just works. We went full throttle on this and fermented the bulk of it in a brand new Puncheon (a 500-litre barrel rather than the standard 225-litre) from Meursault in Burgundy. You always get the maximum impact from a barrel in its first year, but it’s a testament to the quality of the grapes from the Crouch Valley that the fruit character still shines through.

This wine is really bloody good and it absolutely shows how good English still wine can be. People may say it’s expensive, but the best things in life often are, aren’t they? This isn’t a wine you will drink every day; it’s a very limited selection (The Cut – you see?) of the puncheon and a selection of the other very best barrels.

Drink this with the English wine naysayers, the ones you want to impress, the ones you love, just don’t open it up at 2 am after a big night, as that would be a waste, maybe just have a beer, you’ll thank us in the morning…

    The 2023 vintage of The Heretics “The Cut” Chardonnay is a profound example of the excellence emanating from the Crouch Valley, positioning it as a serious competitor to classic White Burgundy.

    Appearance: The wine is clear, displaying a medium intensity pale lemon color.

    Nose: The aroma intensity is pronounced, signaling a wine of serious concentration. Primary characteristics offer a pure core of crisp green apple, preserved lemon, and subtle white peach. Secondary aromas, derived from 100% barrel fermentation and sur lie aging, introduce delicate notes of warm brioche, lightly toasted nuts, and a hint of creamy sesame. The wine is youthful but already highly complex.

    Palate: The wine is impeccably dry, carried by a high, vibrant acidity that is perfectly integrated, offering a “cutting” focus that matches the wine’s name. It has a medium-plus to full body, exhibiting a round, mouth-filling texture—a testament to its barrel work. The flavor intensity is pronounced, echoing the primary fruit with the added complexity of a savory, chalky minerality and a long, persistent finish that echoes the toasted elements.

    Conclusion: This wine is of outstanding quality. Its excellent balance between high acidity and the textural weight from barrel aging allows it to harmonize purity and power. Demonstrating superb complexity, concentration, and a remarkably long finish, “The Cut” punches well above its weight, standing as a benchmark for premium still English Chardonnay. It is suitable for drinking now but has clear potential for evolution over the next three to five years.

    Fantastic with the grapes from Essex makes is extra special. No doubt by a long stretch this and other wines you are producing are the best English wines about and now beating many class French wines.

    Top wine.

    If we’re making Burgundy comparisons, this feels like the Côte de Beaune to Deluxe Seven’s Chablis.

    This one is delicious now and I expect is going to develop even further in the bottle. Great stuff. Cheers!

    Passion in a Bottle.
    Tried The Cut from Heretics Wine and absolutely loved it. A 100% Chardonnay that’s full of character bright, balanced, and beautifully made. You can really taste the care and attention that’s gone into it.

    The guys behind Heretics Wine are seriously passionate about what they do, and it shows in every glass. It’s refreshing to see a UK brand doing something this authentic and exciting. Highly recommend if you’re after a Chardonnay with personality and a story behind it.

    Does just what it says on the label, and more! Drank the Deluxe Seven at a restaurant in August and immediately ordered some when arrived back home. Needless to say, the temptation of The Cut was irresistible and it didn’t disappoint. The higher degree of malolactic fermentation with The Cut takes the Heretic Chardonnay to another level, bringing a lighter, smoother texture through the reduced acidity and well balanced finish. Another great wine. Oh, and I didn’t used to like Chardonnay and thought English wines were slightly overrated but the guys have re-written the rule book. Well done to G&J and the team. Now I’m drinking both, and the Cantillon Rose …

    Delicious Chardonnay guys, the barrel fermentation adds real depth of flavour and character, and rivals some of the best white Burgundys out there. With the promise of it’s ageing potential The Cut is worth the price and more in my humble opinion. Congrats G&J!
